Campfire Jambalaya


An easy way to make jambalaya on the grill is the following: Spray the bottom of you Dutch oven with oil spray. Add 1 lb. of chopped Italian sausage. Add 1 chopped onion and fry until sausage is done. Pour off grease, but leave dregs on bottom of pot. Pour in 2 cups of chopped tomatoes, 1/4 t. garlic salt, 1 tablespoon parsley and 1 cup of chicken broth. (Canned broth and tomatoes are easier.) Chop 1 green pepper and add to mixture along with 1/2 barbecue sauce. Mix well and bring to a boil. Add 1 lb. of cooked shrimp and 2 cups of uncooked rice. Slowly cook over medium heat for 20-30 minutes, stir and test rice for doneness. Serve with some warm toast that has garlic butter. Add a green salad with Homemade Dressing. Yum! This serves about 6 people.
