Cooking Grits in a Black Pot
People who cook outdoors enjoy eating in Africa. In the country side of Southern Africa people cook Mealy Meal which is a corn meal mush. Grits can be prepared in a black pot over an open fire or on your grill. Use 6 cups of water and bring to a boil. Add 1 and 1/2 cups of grits. Add 2 teaspoons of salt. Stir, every now and then, until the mixture thickens. Add 1/2 stick of butter, 1 pound of Cheddar cheese that is in chunks. let all this melt into the grits. Sprinkle 1/4 teaspoon Cayenne pepper on top as you serve it up on plates for your hungry guests. Top with shrimp sauce is desire. Stir 3 pounds of deveined shrimp, 1 stick of butter, 8 ounces of chopped mushrooms, 2 cups chopped onions, 1 glove of garlic, 1/2 cup of parsley, 1/4 cup of tomato sauce and salt and pepper to taste. Cook in your black skillet on another side of the fire while the grits are cooking. Cook at least 3 minutes or until shrimp is done. Do not overcook the shrimp. Happy Cooking Outdoors!
