Corn in a Black Skillet


When you are on a camping trip, you can make your own gourmet food. Since you enjoy cooking, you can become a gourmet cook at your campsite. Raw foods like corn may not be available this time of year, but you can take along frozen corn. Melt some cholesterol lowering margarine into a black skillet and melt. Empty a package of frozen corn into the
pan and add 1 container of yogurt or 1 cup of evaporated milk. May add ¼ cup of chopped red peppers and ¼ cup of chopped onion. Stir and let simmer for 30 minutes.
Serve with grilled quail, sliced pears and hot corn cakes. Add plenty of margarine and molasses, if desire. Enjoy your camping gourmet meal!
