and rock climbing with jeeps are favorite past times of our family. Sometimes jeeps need to be repaired or repainted. This meal honors the jeep recreation as well and outdoor cooking in July! Vitamins are requirement to prevent many illnesses and to maintain good mental health. The vegetables in the melon cups, relish plate and rice dish are high in vitamins A and C. Carbohydrates are in the rice and cake. Fiber is found in the whole grain rice and raw vegetables of the relish plate. Store any left over foods in airtight containers. Take left over cake parts in baskets or gift boxes to shut-ins for a novel treat with the disassembled jeep cake! This meal can be adapted for diabetics by omitting the bread and other high carbohydrate foods. Happiness is cooking and eating!!!!! Happy 4th of July!

SoMore Cowgirl Pie

1 graham cracker crust
1 can sweetened milk
1 chocolate candy bar

1 cup peanut butter
2 eggs optional
6 marshmallows

Mix 1 can sweetened milk and 1 cup peanut butter (smooth or chunky). You can use eggs in the recipe, if you have them. Beat until mixed well. If you do not use eggs, it will still cook. It is sweeter without the eggs. Pour mixture into a black skillet and cook on very low heat until thick. Be careful not to burn. May need to cook away from direct heat. With eggs the time is about 5 minutes. Without eggs it take about 2 minutes. Crumble the chocolate bar into a graham cracker crust and pour the mixture over the top. Roast 6 large marshmallows and arrange on top. Here is a simple meal that can be done on the grill.

Mississippi Mudding Menu

Pigs in the Blanket

Veggie Tray

Cheese Fondu

Mississippi Mud Cake

Creek Water Tea

Wrap cut hot dogs or mini sausages in cressant rolls and place in the bottom of a buttered dutch oven. Cover and bake slowly about 30 minutes. Yummy! While those are cooking clean some vegetables and set aside. These could be prepared at home and brought to site in a plastic bag. Melt about 2 cups of cheddar chesse with 1/2 evaporated milk in a saucepan or another dutch oven. When ready to serve, dip out suace into cups and allow each person dip his/her veggie stick into it and refill as desired. The mud cake is made by dumping a cake mix into a butter or sprayed aluminum pan. Mix in 1/4 cup of oil and 1 cup of water. Cover with foil and bake slowly about 30-45 minutes. Test for doneness by pressing top and if springs back up: it's done. As soon as done, pour a bag of miniture marshmellows on top. Mix 2 chocolate bars of candy with a can of chocolate frosting. Add 2 T. evaporated milk. When mixed over heat well, pour over the hot cake and marshmellows. Yummy!!!!! Now serve it with Creek water tea or your favorite drink. There you have an easy grill menu after your day of mudding or rock climbing.

Remember that the Bible says in Leviticus 23:1 "that the people should celebrate". So celebrate your accomplishments with an enjoyable cookout!!!!

Cookin' Pumkin Bread on Grill

Pumpkin Bread on the grill or open fire

Fall campers like to cook fruit bread. Here is a sample of a Fall Affair. Store pork chops in an air tight container and keep cold until time to grill. Heat up the grill and cook. Mix up a pan of dressing and toss in a Dutch Oven. It will take about 45 minutes to cook. Take a can of green beans, pour off liquid and add a can of coke and cook down while the dressing is cooking. Toss some carrot slices in vinaigrette dressing and you'll be good to go with salad. Mix up a yellow cake in an aluminum pan and cook while you are eating or make this first. Bring along some tubes of frosting and allow the kids to decorate the cake while the other food is grilling. Fall into the fun of grilling with this Fall Affair.

On The Road Again With The Grill

While the weather is still warm hit the backyard with a cookout for a birthday party or celebration for someone getting his/her driver’s license. However with this easy recipe you can make it ahead of time, freeze it and cook at the campsite. Here are the easy directions. Ingredients for 1 bag: 2 eggs, 2 slices of cooked and chopped ham or crumbled fried bacon, 1 tablespoon of chopped red peppers, 1-teaspoon chopped onion, ¼ c. mushrooms, and ¼ c. shredded cheese and salt and white pepper to taste. Mix and place in a pint size freezer bag. Make enough for each member of your group. Freeze. When ready to camp out, place all bags on ice. Keep cold. When ready to cook, heat pan of boiling water and carefully lower bags. Cook approximately 10-12 minutes. Carefully remove and cool. Open bag and place on plate. Serve with link sausages and biscuit. Happy camping with this bag omelet idea.

Campfire Jambalaya

An easy way to make jambalaya on the grill is the following: Spray the bottom of you Dutch oven with oil spray. Add 1 lb. of chopped Italian sausage. Add 1 chopped onion and fry until sausage is done. Pour off grease, but leave dregs on bottom of pot. Pour in 2 cups of chopped tomatoes, 1/4 t. garlic salt, 1 tablespoon parsley and 1 cup of chicken broth. (Canned broth and tomatoes are easier.) Chop 1 green pepper and add to mixture along with 1/2 barbecue sauce. Mix well and bring to a boil. Add 1 lb. of cooked shrimp and 2 cups of uncooked rice. Slowly cook over medium heat for 20-30 minutes, stir and test rice for doneness. Serve with some warm toast that has garlic butter. Add a green salad with Homemade Dressing. Yum! In the country side of Southern Africa people cook Mealy Meal which is a corn meal mush. Grits can be prepared in a black pot over an open fire or on your grill. Use 6 cups of water and bring to a boil. Add 1 and 1/2 cups of grits. Add 2 teaspoons of salt. Stir, every now and then, until the mixture thickens. Add 1/2 stick of butter, 1 pound of Cheddar cheese that is in chunks. let all this melt into the grits. Sprinkle 1/4 teaspoon Cayenne pepper on top as you serve it up on plates for your hungry guests. Top with shrimp sauce is desire. Stir 3 pounds of deveined shrimp, 1 stick of butter, 8 ounces of chopped mushrooms, 2 cups chopped onions, 1 glove of garlic, 1/2 cup of parsley, 1/4 cup of tomato sauce and salt and pepper to taste. Cook in your black skillet on another side of the fire while the grits are cooking. Cook at least 3 minutes or until shrimp is done. Do not overcook the shrimp. The outdoors is calling. It’s time to go camping! What foods do you take so that they will remain fresh, yet nutritious? Granola Bars are an easy way to take vitamin nutrition supplements with you on a camping trip. These bars will have the taste of home recipes, because you made them at home ahead of time and packed them in an airtight container. It may not be “emirel’s recipe” but try them. You’ll like this free healthy recipe.

Granola Bars with yogurt

2 cups oats
2 cups barley flakes
1cup rye flakes
½ cup wheat germ
½ -1 cup whole-wheat flour
½ cup sesame seeds
½ cup sunflower seeds
1½ cup chopped nuts
½ cup bran
1 cup chopped dates
1 1/2 cup raisins
¼-1/2 cup yogurt
1 ½ honey and molasses
2/3cup oil or melted butter
1 beaten egg

Heat honey mixture and oil in microwave for 30 seconds. Mix oats, barley, rye, wheat germ, flour, and bran together. Pour oil mixture, yogurt and egg into dry mix. Mix well. Add seeds, nuts, dates and raisins. Mix again. Adjust yogurt and flour to the mixture.
Spray a casserole dish and press mixture into the dish. Bake at 350 degrees for 20–30 minutes. Cool and slice into bars. Makes 24 bars.

I used 1 box of granola cereal, 2 cups graham flour, 1 egg and 1 jar of yogurt and mixed with 2/3 cup heated honey and molasses and 1/3 cup oil. I baked the mixture in a black cast iron dutch oven over medium coals at the campsite. They turned out delicious!

Do camp fires cause Global Warming?

The whole debate of Golobal warming has had me confused for years. Freshly ground sausage from a freshly killed animal while hunting is excellent. When meat is done, mix 3 cups of biscuit mix, 1 cup of shredded cheese and the cooked meat in a gallon plastic bag or food storage container. If using a plastic bag, close and mix all the ingredients from the outside of the bag with your hands. If using a container, mix inside the bowl all the ingredients by hand. When mixed well, shape into balls by hand. Place in Dutch oven or skillet and cook approximately 10-20 minutes or until done and brown. May sprinkle paprika on top. Serve warm. Store left-overs in an air tight fook storage container and keep cold.

Fire safety for children

Fire Safety for Children
The Christmas time is a fantastic time of lights and decorations, with paper and candles and plenty of other combustible material laying around.
Don't let the unthinkable spoil your Christmas this year.
View this USFA fire prevention for babies and toddlers program and have a safe and happy holiday:
http://www.usfaparents.gov/index.shtm

For more child safety tips see:
http://www.pottytrainingsite.com/Child-safety-articles.htm

And for even more safety tips see:
http://mikestrawbridge.com/safety-resources.htm

Campfire Turkey

Campfire turkey

This hunting season, why not cook one of the turkeys on your campfire? After you clean and dress your turkey, par-boil with spices tied in a cheese bag for about 30 minutes. Pour off the water. Rub your turkey with corn oil. Place a cored apple on the inside. Pour a can of coke into a Dutch oven with lid. Place your turkey in the Dutch oven and cook over medium heat (350°) for 4-6 hours depending upon the weight. They found a bit more adventure than they bargained for.

I arrived on Friday night and met the group that already had a nice campfire going. We sat around the fire and I enjoyed listening to the stories of the adventures I had missed that day.

As we sat around the fire we dined on generic cookies - we call them guvmnt cookies like the no name cheese and peanut butter that is distributed as government surplus.

I broke out the peanut butter camping balls and every one was thrilled with the burst of flavor compared to the dull cookies. The large container of peanut butter balls did not last long in this hungry group.

The next night night after a huge adventure which is chronicled here ==> http://mikestrawbridge.com/jeep-offroad-harlan-ky.shtml

we set up our campfire under a small shelter near the helicopter pad. As this was one of the highest points on the mountain there was no protection from the wind. We attached a tarp to one side of the shelter to give us a break.

While we waited for the fire to form cooking coals, we had an appetizer of pan fried chicken dumplings.

There we dined on wonderful char grilled steaks, potato boats made with potato slices, onions and mushrooms. Then there was grilled corn and apple pie for desert.

Nothing tastes better than food cooked over a campfire after a hard day on adventure on the trail.

Corn in a Black Skillet

When you are on a camping trip, you can make your own gourmet food. Since you enjoy cooking, you can become a gourmet cook at your campsite. Raw foods like corn may not be available this time of year, but you can take along frozen corn. Melt some cholesterol lowering margarine into a black skillet and melt. Empty a package of frozen corn into the
pan and add 1 container of yogurt or 1 cup of evaporated milk. May add ¼ cup of chopped red peppers and ¼ cup of chopped onion. Stir and let simmer for 30 minutes.
Serve with grilled quail, sliced pears and hot corn cakes. Add plenty of margarine and molasses, if desire. Stir together and drop into a hot black skillet and cook for about 10 minutes. Flip and cook 10 more minutes. If you do not want canned okra, buy frozen okra or take fresh okra and slice. He had been a hobo during the 1930’s Depression and “road the rails” throughout the United States looking for work. Later in life he artfully shared stories by firesides with family, hunting friends, and youth church groups. As we roasted our hot dogs or marshmallows on twigs that were stripped of bark like he taught us, he enlivened the atmosphere with tales. He was a skillful storyteller who used his voice with melodrama, talking slowly to emphasize spooky parts and lifting his voice to a high crescendo at the climax. He felt that people should tell spooky stories based upon real events in their lives.

Below is another Straw spooky tale, based on an actual event.

The Cemetery Spook

In Aberdeen, Mississippi, there is a mausoleum (photo above) for a prominent family. When the matriarch of the family passed away, they placed her body there along with her favorite rocking chair. The mausoleum had glass doors through which people often peered. It is widely known that on full moonlit nights, observers have watched her chair rock. On stormy nights, between lighting flashes, people have sworn they have seen her sitting in the chair, rocking.

Straw II grew up listening to these tales that are still repeated each year during the antebellum pilgrimage. He, his siblings and cousins often went to see if they could detect her rocking. They also loved to play hide-n-seek among the tombstones on summer nights.

One night “It” was counting. Straw II hid behind a nice large tombstone that he felt protected him from view. He sensed that his brother, Clint, and his, sister, Faye, were nearby. He didn’t know where his cousins, Tyson and Bill were hiding. He waited quietly while “It” finished the countdown. “It” shouted, “Ready or not, here I come.”

Straw II crouched lower behind the gravestone. He’d forgotten that he was standing on a grave.

“It” began to walk in his direction. Straw II crouched lower. “It” came closer. Straw II stepped back. Each time that “It” came nearer, he would take a step backwards.

Just as “It” was on him, he backed into something or someone! He could feel huge hands around him! He looked up into a stone cold face. Two arm-like wings seemed to reach all the way to the full-faced moon. He just knew that someone had come up out of the grave or the old lady in the mausoleum had grabbed him!

He let out a blood-curdling scream! His heart pounded so hard that it sounded like Casey Jones’s engine trying to make up time on the trip from Memphis to New Orleans. His feet moved so fast that sparks probably left marks on the sidewalk. He didn’t stop racing and panting until he ran into the backdoor of his house, straight into the protective arms of his grandmother.

How his friends, cousins and siblings laughed the next day when they took him back to cemetery to show him what he had backed into! There stood a huge statue of an angel at the head of the grave where he was hiding! Even though it looked different in the daylight, Straw II never forgot the cemetery spook that almost had him!

A story like this makes good fodder for night time spook tales around the campfire on a cold October night when the moon is full.

Chicken Pizza on the Grill

To make a chicken pizza, take a can of crescent rolls with you in the cooler. Also take 1 cup of mixed shreded cheeses and 1 cup of Parmesan cheese. You will need 1 cup of pizza sauce or catsup to mix with chicken. Add 1/4 cup chopped green and red peppers, 1/4 c onion and 1/4 cup chopped mushrooms. Grill four chicken breasts and chop. Mix chicken, peppers, onions and mushrooms with pizza sauce and set aside. Spread the rolls around the bottom and sides of black skillet because this is a deep dish pizza. Sprinkle cheese on top. Cover and grill/bake about 45-60 minutes. After 30 minutes check for doneness of crust. Grill/ bake on low heat to prevent burning of center of crust. This is a picture of the tasty grilled chicken pizza. Recently some young adults served this on a camp-out and found it easy to prepare and very tasty! Serve with mixed salad greens (that have been washed in salty water before going camping) and dressing to complete the meal.

Barbeque Sauce with Jelly

Barbeque Sauce with Jelly

1 can tomato paste
1 cup grape jelly
¼ t. garlic
2 T. oil
¼ cup vinegar
¼ t. cayenne pepper
3 t. honey
1 t. Just follow these easy steps.

Step 1: On the surface-ground or deck-place a circle of bricks on their sides -one layer thick-without mortar. Place a strap or wire around the brick circle so the bricks will not move when concrete is poured.

Step 2: Mix concrete and pour onto surface up to the top of the layer of bricks. Wait at least one day for the concrete to set and harden.

Step 3: Remove the strap. Stand a row of bricks on end on top of the first layer of sideways bricks-without mortar.

Step 4: Place an 8” diameter stiff plastic bucket in the center of the brick circle. Lay a plastic pipe with ½” diameter against the bucket to extend out a crack between 2 bricks. This will allow water to drain from the pit when the pit is finished. Secure strap around bricks to hold in place to prevent concrete from pushing them out. Mix concrete and pour around the bucket and on top of pipe to the top of the brick circle. Allow to set and harden at least one day.

Step 5: When concrete is hardened, remove strap and bucket.

Step 6: Mix mortar and layer 2 or 3 layers of bricks on top of existing brick rows. Fill gaps of other layers and smooth. Remove excess with a wire brush when hardened.

Step 7: When hardened, fill pit with charcoal and ignite. Wait for coals to become white hot. May use a grill over the top or lay skewers over the coals and slowly cook.

The Fogo de Chao or fire on the floor will be a great conversation piece while cooking and entertaining guests. Serve finger foods and beverages while watching the food cook.

Note: Observe safety rules. Keep fire away from tree limbs or house, yet closer to outside entertainment area.

Cooking on a skewer

Place meat, sausage and roast or other meat on skewers. Insert into sides of grate to stand up, yet within range of heat. As the outside of the roast cooks, cut off slices and serve or reserve in a warming dish or warmed slow cooker. Takes approximately 10-15 minutes to cook outer layers, depending on the desired doneness. This is adapted from the Brazilian method of cooking. It is a fun way to entertain guests. Now we all know what can happen when you play with fire - you wet the bed. Not sure where that old tale came from but it you still have trouble with it, don't drink so much while sitting around the camp fire and see our other blog - http://pottytrainingsite.blogspot.com

Always plan your camp fire site well and make sure it is on a clear space and that all the combustible material is removed from the ground around where the fire is to be.

Also, beware that sparks can travel long distances so if it is dry out, don't build a fire. Use a propane stove or cook on the dashboard instead.

But always remember that if you worry about stuff that can go wrong, it will. My Granddaddy Straw had the best short campfire ghost stories that I have ever heard.

I remember one camping trip when we were boys when it rained all night so we were all huddled close around the fire. Daddy Straw told us a series of short ghost stories that had us all too scared to go to our tents. We just stayed huddled close to the fire all night.

One of his favorites was about walking down a dusty road and meeting a man who did not speak. As he and his friend discussed the man they disagreed about which side he had passed on. They decided to settle the argument by going back and looking at their tracks.

When the turned around, they could not see the man. And then much to their surprise they could not see his tracks in the dusty road. Only their two sets of tracks were visible.

You can make your own version of this scary campfire story to match any occasion. However, the temperature outside was so extreme that the power company was turning off the electricity for periods of time. I had heard about cooking in the car when the temperature is 95 degrees or above, so I decided to try it. Here are the results. The texture was not as crisp as oven baked and they were not browned, but they were delicious. The recipe is: 1/2 cup butter creamed with 1/3 cup honey. Beat 2 eggs very well and add to butter mixture. Add 1 teaspoon almond flavoring. Mix in 2-1/2 cups whole wheat flour and 1-1/2 teaspoon baking powder. Mix well and drop by teaspoons onto cookie sheet. Set on car dashboard for at least 1-2 hours. (Note: Make sure car is free of insects or pests and dashboard is clean.) Check after one hour for desired doneness. Moral of story is: If you can bake cookies in a car; what does the high heat do to children or pets that are left in hot vehicles?

Beans on the Grill

Beans on the Grill: Place beans in black pot. First you need some wood. Dry wood is preferable to wet wood but either will work.

Start your camp fire by stacking some two to three inch diameter camp fire logs like a Lincoln log cabin. Start with four to six logs stacked like a cabin.

Inside the space, pile up a few leaves, very small twigs and what ever fire starter material you have. The core of an old pine stump is the best thing you can use. There are also some commercial fire straterblocks you can buy.

Build a little tee pee of small wood over your fire starter.

Now you may have seen waterproof matches in camping books, but these should be gone with the wind by now. I think the only people using phosphorous matches now are meth labs. Not sure why they don't put the matchbooks behind the counter instead of the cold medicine.

Use a butane lighter. These work even in the rain. Even if you drop it in a puddle. If you are using matches, you might as well be using flint and steel. If camping where I can carry what I like, I use a propane torch. You can start a camp fire with even wet camp fire logs using a propane torch.

As the fire grows, you can add bigger and bigger camp fire wood to the stack.

How to make Smores

Smores are a traditional campfire food favorite. In fact I just is not campfire cooking without Smores. On our trip to Livingston, Ky 5 ear old Jake demonstrated just how much fin it is to make smores by making one for all the Jeep campers as an appetizer while our steaks grilled.

How to make smores:

Take a rectangular Graham cracker and break it in half forming two squares.
Break a Hershey chocolate bar in half and place half the bar on one of the crackers squares.
carefully toast a couple of marshmallows over the camp fire. The trick is to get them hot enough to melt the chocolate but not burn them to a crisp. They have a pretty golden color when done just right.
Place the properly toasted marshmallows on top on the chocolate bar and top with the other half of the Graham cracker.

Allow just enough time for the chocolate bar to melt then enjoy while its warm.

For s'more ideas on how to make smores, see this link or look in the Callaway cookbook.

Playing with Fire

Managing your camp fire cooking heat source.

Last year at the XJ list fall crawl, I learned some great fire management skills from a guy with the ironic nickname of Frosty.

In order to move around hot logs, he used a pair of metal chopsticks. Using these tongs, he could move a heavy hot log anywhere in the fire pit he wanted to. This tool allowed him to concentrate the heat in one area or spread it out as needed for best cooking.

To make your our frosty fire chopsticks, go to a local hardware store and pick up a stick of half inch thin wall conduit. It usually comes in ten foot sections. Cut it into three sections just over three feet long. Since our recent survey showed most readers have only two arms, one of your three poles will be a spare. You can make your two main sticks longer if you wish.

Practice on cold wood before you give it a trial by fire. Once you get the hang of using these chopsticks, you will wonder how you ever built a fire without them.

If the fire is really hot or the air is really cold, you may want to use gloves when handling your fire sticks.

How to cook on a camp fire

Campfire cooking is fun and easy.

Prepare a nice medium fire. Make a sirloin patty and place in center of a tin foil square. Add onion slice, sliced carrot and sliced potato. Salt and Pepper if prefer. Top with 1 teaspoon margarine and wrap. Allow to bake about 60 minutes. Test for preferred doneness. Mix 1 cup self rising flour, 1 tablespoon mayonnaise, 1/2 milk or water in a plastic bag. Squeeze or stir until mixed. Melt margarine or butter in bottom of Dutch oven and drop balls of dough. Cover and bake for 30-45 minutes. Check for doneness and brownness. Turn over and bake more, if desired. For dessert top a peach half with a marshmallow and wrap in a tin foil square. Bake for 20-30 minutes. Hanging out by the campfire with the guys form the XJ list is always entertaining, but this time the food was excellent.

Maybe because I was very hungry. Maybe because it was warmer than 20 degrees out. Maybe because there was no sand in the steak.
